A bowl of Pasta & fresh peas, any one?!!

Certainly! Here’s a simple and delicious recipe you can quickly prepare for a delightful lunch or dinner effortlessly. Just follow the steps below;

Ingredients;

– 225g of your favorite pasta ( such as Buitoni Fettuccine pasta, organic Angel hair pasta or spaghetti pasta etc.)

– 1 cup fresh peas, shelled

– 2 tablespoons olive oil

– 3 cloves garlic, minced

– 1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Red pepper flakes (optional, for some heat)

– Fresh basil or mint leaves, chopped or whole, for garnish

Instructions;

1. Cook the Pasta:

   – Bring a large pot of salted water to a boil.

   – Cook the pasta according to the package instructions until al dente.

   – Reserve about 1/2 cup of pasta cooking water before draining in your colander.

2. Prepare the Peas:

   – While the pasta is cooking, blanch the fresh peas in boiling water for about 2 minutes or until they are bright green and tender.

   – Drain the peas and set aside.

3. Make the Sauce:

   – In a large skillet, heat olive oil over medium heat.

   – Add minced garlic and sauté for 1-2 minutes until it becomes fragrant but not browned.

   – Add the blanched peas to the skillet and sauté for an additional 2-3 minutes.

You could choose to add tomato paste while you sauté your peas (optional)

4. Combine Pasta and Peas:

   – Add the cooked pasta to the skillet with peas and garlic. Toss everything together, allowing the flavors to meld.

   – If the mixture seems dry, add a bit of the reserved pasta cooking water to reach your desired consistency.

5. Season and Garnish:

   – Season the pasta and peas with salt and black pepper, and red pepper flakes (if preferred). Adjust the seasoning according to your taste.

   – Add the grated Parmesan cheese and toss until it melts into the pasta.

6. Serve:

   – Serve your pasta and pea mixture in bowl or plate and garnish with freshly chopped basil leaves.

   – Additionally, you can drizzle a bit more olive oil or sprinkle additional Parmesan cheese, and assemble 3 slices of avocado on top before serving.
